A Journey of Tradition and Innovation: From Paan to Wine

In the heart of Karnataka’s Malnad region, a passion for local produce ignited a culinary transformation. Sushma Sanjay, a visionary farmer, embarked on a journey to elevate the humble betel leaf and areca nut into a tantalizing indulgence.

Years of meticulous experimentation culminated in the creation of Talisva Winery, a family affair that celebrates the region’s bounty. Alongside her son Akarsh, an astute entrepreneur, Sushma has nurtured her hobby into a burgeoning enterprise. Their wines, crafted from the finest grapes, pineapples, oranges, and even ginger and jamun, have delighted palates far and wide.

Yet, one ingredient remained elusive: areca nuts, the cornerstone of Shivamogga’s agricultural heritage. Undeterred, the Sanjays resolved to unravel the secrets of incorporating this distinct flavor into their wines. After countless iterations, they stumbled upon a breakthrough: a secret infusion process that unveiled the areca nut’s subtle complexity.

The result is an extraordinary dessert wine that harmoniously blends betel leaf, honey, and areca nuts. Its fermentation process, spanning five meticulously controlled months, imparts a unique depth of flavor. The wine’s alcohol content hovers around nine percent, inviting a leisurely sipping experience.

“Our aim,” says Sushma, “is to transform paan, a beloved Indian tradition, into a sophisticated dessert delight.” And indeed, Talisva’s betel leaf wine has captivated the taste buds of oenophiles and paan enthusiasts alike.

Beyond their vinous creations, the Sanjays envision a future where their farm becomes an agro-tourism haven. Visitors will embark on immersive journeys through their vineyards and production facilities, witnessing the transformation of nature’s gifts into delectable libations.

As they navigate the complexities of patenting their innovative process, the Sanjays remain steadfast in their pursuit of distinction. They believe that Talisva’s betel leaf wine is a testament to the boundless culinary possibilities that lie within India’s rich agricultural tapestry.

And so, the story of Talisva Winery continues to unravel, a saga of passion, innovation, and a profound appreciation for the land’s abundant treasures.
